Definitely an acquired taste, bitter gourd (Latin Momordica charantia)
is also called Balsam pear or bitter melon. Young immature bitter
gourds are the best for cooking: the skin is bright green in color,
the flesh inside is white, and the seeds are small and tender. The
vegetable is ridged, and the skin is pebbly in texture. Do not use
mature bitter gourds, and do not eat bitter gourd if you are pregnant
or nursing.
Bitter gourd contains vitamin A, B1, B2, and C. It also contains minerals
like calcium, phosphorous, iron, copper and potassium. From the ayurvedic
perspective, bitter gourd is excellent for balancing Kapha. It helps
purify blood tissue, enhances digestion, and stimulates the liver.
To prepare bitter gourd for cooking, wash thoroughly, then cut
in half lengthwise and scrape out the seeds with a sharp spoon or
corer and discard. Cut or slice as called for in your recipe, and
blanch for 3-4 minutes in boiling water to which a little salt has
been added. Drain.
If you find that you cannot eat bitter gourd by itself, you can
add some to other dishes such as vegetable soups and lentils to
take advantage of its therapeutic properties.

In Asian cooking it is the half-ripe pods and compound leaves made
up of many small, tender rounded leaflets, which are most used in
a culinary context. The flavour of the pods has been compared with
asparagus and the texture with marrow. They are a popular ingredient
in vegetable curries, from southern India to Sri Lanka and Malaysia.
Wash pods and with a vegetable peeler scrape lightly along the
skin, removing any dry looking patches. You cannot remove all the
tough outer skin which is cooked along with the edible parts, rather
like an artichoke. Be prepared to work a little for the soft, flavoursome,
jelly-like pulp inside.Leaves require a good wash in cold water,
and a vigorous shaking. If they are to be fried, pat them in a tea
towel and leave for a while to dry or they will spatter furiously
when added to hot oil.

Ladies finger grows in an elongated, lantern shape vegetable. It
is a fuzzy, green colored, and ribbed pod that is approximately
2-7 inches in length. This vegetable is more famously known by its
rows of tiny seeds and slimy or sticky texture when cut open. It
is also known as bamia, bindi, bhindi, okra, and gumbo, is a member
of the cotton (Mallow) family.
Okra is a powerhouse of valuable nutrients. It is a good source
of vitamin C. It is low in calories and is fat-free.
It is stuffed with spices and deep fried; pickled in spices and
oil; curried with coconut milk, much as any other vegetable; and
stir-fried in a dry style of dish.
